Hey Robyn! I was excited to see these posts after not checking for a few days. I've been vegetarian for about 5 months now and am about to read the book "Eating Animals" this summer because it was chosen as a freshman common book at both Duke and UNC this year. I have not missed meat at all -- just the IDEA of chick-fil-a and of chicken BBQ sandwiches. My mom is vegan and I'm sure she'd be glad to share info with you, too (since she's in Richmond). For me, my shift has given me a bit of a low B12 level (which I am correcting starting this week via injections) and a bit higher cholesterol than my doc would like (probs b/c I'm replacing meat with cheese, ha). I agree with your earlier comment that if you really just amp up the healthy and whole-grain things you eat (fruits, veggies, complex carbs, beans, nuts, tofu), then dieting shouldn't be a problem down the line. I have a few blogs with recipes I like, etc. and would be happy to share! Just email me and we'll keep chatting.
Thanks, Samara! I had no idea you were vegetarian. We should discuss the book once you read it:). I have been vegetarian for a week and a half and am finding it very easy- but my body has been adjusting to digesting all the veggies I have added to my diet! I am not a big cheese person- I replace a lot of meat with nuts and more whole wheat pasta. I think I will get "Vegan for Dummies" to ease myself into that. I'll keep ya updated and could always use new, easy recipes!
